Differents way to prepare it

Scramble eggs with truffles.

 
Preparation time : 10 min
Cooking : 15 min
 
For 6 persons :
10 eggs
1 soup spoon of trick fresh cream
50 gr of black truffle
Olive oil
20 gr of butter
Salt and pepper
 
In a saucepan, mix the eggs in omelette, add salt and pepper with the butter in small cubes.
Cut the truffle in thin slices, add them to the eggs and place in the fridge for at least one hour.
Put the saucepan in a double boiler on medium fire. Mix non-stop with your egg wisk .
When the eggs start to thicken, turn off the fire and stir.
Remove the saucepan from the double boiler . Add the cream and mix as long as the cooking pursues.
Serve immediately with a slightly dressed salad.
 
You can eat it buttery slices of bread !
You can keep the eggshell and fill it with your preparation.
 
(Put your truffles and your eggs all together in a same hermetic box in your fridge for 24 hours, your eggs will take the taste of the truffles !!! )
 

Risotto aux truffes

 
For 4 persons :
200g of risotto rice
40g of truffles
150g of ham
parmesan
60g of butter
1/2 litter of poultry broth
5cl of fresh cream
1cl of olive oil
 
 
Melt half of the butter in a frying pan. Add the cubed ham and fry it. Put the rice in and stir and then add the broth. When the rice is cooked, add the cream, the rest of the butter, sliced truffle and sprinkle the parmesan.
Serve it right away !
